As an Eastern European, I love me a nice filling hot hand pie — so now I make them vegan and high-protein. No need for cheat meals when regular meals are just as tasty! Whether you're meal-prepping for a busy week, feeding friends, or packing a hearty snack for a trip, these plant-based pierogi hit the spot.
We’re using vital wheat gluten and chickpea flour to create a chewy, savory, protein-rich dough (think: seitan pierogi magic), and the filling options? Limitless.

Ingredients
For the Dough
- 2 cups vital wheat gluten (240 g)
- ½ cup chickpea flour (60 g)
- 1 tsp salt
- 1 tsp baking soda
- 1½ cups water (360 ml)
- ¼ cup nutritional yeast (20 g)
- ¼ cup peanut butter (60 g)
Filling Options
Pick your fave combo or mix and match. Each makes enough for a full batch of dough.
- Mushrooms + onions + vegan sausage (I use MorningStar)
- Sauteed cabbage and carrots + chick peas
- onion + chive + vegan cheese
- Apples + butternut squash or pumpkin + raisins + cinnamon + coriander
Instructions:
- Set a medium size pan on medium heat and saute your fillings, chopped to the 1/2 cubes for 10-15 minutes, or until softened. Pies will not be cooking for long enough to cook the ingredients through and not overtry the batter.
- Assemble the hand pies with 1 table spoon of filling inside.
- Air fryer: set to 350°F for 10 min, flipping half way through.
- Conventional oven: 375°F for 7 min per side, or until done.
